SUMMARY: what are /net and /home used for and why can't I delete them?

They used by the automounter.

See the man page for automount and automountd. See also
/etc/auto_home and /etc/auto_master.

/net allows you to dynamically access a remote system's nfs file
systems by simply cd'ing to /net/`remote system name`.
