Thanks to John Heiden for giving me the answer. My original question is 

Well, you could use SED to do this.  You could do something like:

cp /etc/vfstab /etc/vfstab.old
cat /etc/vfstab | sed "s/oldstring/#oldstring/" > /etc/
cp /etc/ /etc/vfstab
