Thanks everyone!

Seems the most popular POP3 server is at Qualcom...

  ftp://ftp.qualcom.com/quest/unix/servers/popper/qpop2.1.4-r3.tar.Z

We grabbed this and set it up (it was so simple!) and it works just
great with Eudora (a Qualcom product). So my original question was
answered. But I also tried this POP server with Pegasus Mail
(freeware) and that *doesn't* work! I know Pegasus Mail is setup
correctly 'cause I can access other POP servers okay with it.

So for a Eudora POP server I recommend the above. For other mail
programs, however, this may not be sufficient!

Other recommended POP servers were

  ftp://ftp.cac.washington.edu/mail/imap.tar.Z

which seems to work okay (it did, at times, seem less reliable than others),
but it was a much larger package and had less installation docs, and

  ftp://ftp.uu.net/networking/mail/popper/popper-1.831beta.tar.Z (not tested)

So, for Eudora use try Qualcom's own POP server!
